Spicy Pepper Shrimp of the Woods Mushrooms
20 mins prepServes 3
A recreation of spicy pepper shrimp using shrimp of the woods mushrooms, which have a similar texture and absorb flavors well. The dish features a flavorful, spicy marinade and is served as a gravy over rice or quinoa.
Prepare the marinade by combining the juice of 1 sweet lime (or a lime or 1/2 a lemon), 2-3 finely chopped scotch bonnet peppers, 3-4 finely chopped garlic cloves, 2 tbsp chopped arame seaweed (or 1/2 sheet of nori), 3-5 diced scallions, onion powder, sweet paprika, Old Bay, 1/2 tsp sea salt, 1/2 tsp black pepper, 1 tsp crushed allspice berries, 1 tsp crushed annatto seeds, 1/2 tsp coconut sugar (optional), 3-4 fresh thyme sprigs, and 1 cup veggie stock. Let the shrimp of the woods mushrooms marinate for at least one hour to overnight. Sear the marinated mushrooms first on a hot pan before pouring the remaining marinade over them to create a gravy sauce. Serve the dish over rice or quinoa.
